AIMEE FORTNEY'S HASHBROWN WAFFLES
3 baking potatoes washed and grated
1/2 small onion, grated
Salt and pepper to taste
Preheat waffle maker. Grate potatoes and onion into abowl. Before grating all of onion, blot mixture to absorb excess liquid. Greasewaffle maker with cooking spray. Using an ice cream scoop, scoop mixture intowaffle maker.
Cook for about 12-15 minutes. Season with salt and pepper andserve with a fried egg on top!
