Friday's recipe (11/30/12) - Aimee Fortney's caramelized onion, fig and goat cheese pizza

Delicious and unique does not have to mean difficult and expensive! This tastes like a gourmet pizza, but it is so easy to make! Your guests will be so impressed and you won't be at all stressed!

AIMEE FORTNEY'S CARAMELIZED ONION, FIG AND GOAT CHEESE PIZZA

1 pound refrigerated pizza dough (I use Publix bakery dough)
2 sweet onions (or 2 yellow onions) sliced
1 teaspoon sugar (optional)
1 Tablespoon olive oil
6 Fresh figs, sliced in half
4 ounces goat cheese
2 cups shredded mozzarella cheese
Freshly torn basil

Preheat oven to 400. In a medium skillet, heat oil then add onion slices. Cook for about 10 minutes, stirring frequently, until onions are caramelized. If desired, you can add sugar and a splash of water, if needed, to cook the sugar into onions. Lightly spray pizza pan with cooking spray. Roll pizza dough out on pan. Place onions over entire pizza then place figs on top of onions. Place pieces of goat cheese on top of figs, then sprinkle mozzarella over entire pizza. Cook for 25-30 minutes. Remove from oven and add fresh basil. Enjoy!
