The fancy paninis at restaurants are no more "fancy" than what you could make at home; they just come with a "fancier" price tag. If you don't have a panini maker, no need to feel that you can't make this at home! Just use a heavy cast iron skillet, or your heaviest skillet to weight it down, and you have an instant panini maker, and a panini on a budget!
AIMEE FORTNEY'S CRANBERRY TURKEY PANINI
2 ounces honey goat cheese
fresh baby spinach
3/4 cup lowfat plain Greek yogurt
1/2 cup whole berry cranberry sauce
1 pound roasted deli turkey
your favorite bread
In a cast iron skillet, heat to medium heat. In a small bowl, mix together Greek yogurt and cranberry sauce. Set aside. Spread goat cheese on one (or both sides) of bread. Spread a layer of the cranberry mixture on bread, then place fresh spinach on top of sauce. Add turkey, then top with other piece of bread. Now comes the fun part - if you do not have a panini maker, you can still have a panini! Cook as you would a grilled cheese, but place a small, folded piece of parchment paper on top of bread, then top with another cast iron skillet and a large canned food item (for weight). After about 1 minute, check to see if it is ready to be flipped, then proceed with doing the same process for the other side, removing the parchment paper and then placing it on top of the sandwich again. (This is to prevent the bottom of your skillet from coming into direct contact with your sandwich).
