Monday's recipe (10/22/12) - Aimee Fortney's cinnamon tortilla chips

Aimee Fortney's cinnamon tortilla chips with caramel dipping sauce and salted chocolate sauce

6 flour tortillas (any size)
1 teaspoon ground cinnamon
2 Tablespoons sugar
Cooking spray

Place tortillas on cookie sheet and lightly spray both sides of tortillas with cooking spray. Mix cinnamon and sugar together, then sprinkle mixture on both sides of tortillas. Bake at 350 for 10-14 minutes. Cut into triangles and serve with chocolate and caramel dipping sauces.

Chocolate sauce:
2 cups Chocolate chips (or chopped chocolate)
1 cup heavy cream
1/2 teaspoon kosher salt (optional)

Place chocolate chips in a heavy glass bowl and set aside. Heat cream in heavy pan but remove before boiling. Pour cream over chocolate chips and stir to melt chocolate. To make salted chocolate, add kosher salt and stir.

Caramel sauce:
1 stick unsalted butter
1 cup brown sugar
1 cup heavy cream
1 teaspoon vanilla

In a sauce pan, melt the butter and stir the brown sugar and heavy cream into butter mixture.  Remove from heat and add vanilla.
