Aimee Fortney's Mexican turkey meatloaf with salsa topping (10/19/12)
Michala's favorite meal is meatloaf, mashed potatoes and green peas. If we had this and our homemade pizzas every night, my child would be tickled to death!
1 pound ground turkey 1 pound ground turkey 1 white onion, grated (I use a grater to make the onion juice come out, and to change the texture) 1 carrot, grated 1 cup leftover cooked rice Sazón Completa (to your taste) 1 teaspoon ground cumin salt and pepper (to your taste) 1 egg, beaten 1 to 2 cups pico de gallo or jarred salsa
Ads seasonings, rice, grated onion and carrot to combine. Add egg then, Lastly, add your ground turkey (or beef) and mix all together. (I like to add the meat last, or you could overwork your meat and make it tough.) Grease a loaf pan, and pour into pan. Now add your homemade pico de gallo or your favorite salsa, then spread over top. Bake at 375 for 50 minutes to 1 hour.
