AIMEE FORTNEY'S WHEAT TORTILLA PIZZAS

Here is a fun, healthy way to eat pizza!  Use any tortillas that you love; a whole wheat or multi-grain is best; or a spinach tortilla!

 6 to 8 Whole Wheat Tortillas (Use more or less as necessary)

splash of olive oil (or cooking spray)

1 bag of fresh spinach

1 shallot, finely diced or 1 small red onion, cut in long strips/rings

1 clove garlic, minced

sliced mushrooms

1 package crumbled feta cheese

1 cup ricotta cheese

1 cup shredded Italian cheese

 Preheat oven 400 degrees.  In a medium sized skillet, saute red onion (or shallot) and mushrooms in splash of olive oil.  Add spinach and garlic, cook down until spinach has wilted.  Place tortillas on cookie sheet.  Top tortillas with spinach mixture, then add "dollops" of ricotta to each tortilla.  Next, sprinkle feta cheese on top, then sprinkle Italian cheese over entire mixture.  Bake at 400 for 10 minutes.  Enjoy!
