5 lb bag red potatoes
1 large vadalia onion
Apple cider vinegar 1 bottle 32 oz.
2-3 teaspoons Sugar
1-2 teaspoons Salt and pepper
1. Boil potatoes whole with skin left on for 15 minutes-20 minutes depending on potato size. Add teaspoon salt to water before boiling.
2. After potatoes cool, peel then slice into thin slices. Place in a bowl and add tablespoon of canola oil and gently mix into slices. Cut onion into thin slices. In a LARGE bowl or pot, layer potato, then onion, then 1/8 tsp salt and pepper and 1/2 teaspoon sugar and pour 1/4th of apple cider vinegar. Continue layering these ingredients. When layering complete, all ingredients should be covered with apple cider vinegar. Mix all ingredients and add salt, pepper, and sugar, to taste. Chill and serve.
