Black Eyed Pea Fritters

INGREDIENTS:     AMOUNT NEEDED UNIT MEASURE
           
Yellow Corn Meal      1/2 LB
All-Purpose Flour      1/2 LB
Baking Powder     1    TBSPN
Salt       1 TBSPN
Sugar       2 TBSPN
Black Pepper     1 teas
EGG, whole     3 ea
Buttermilk       1 Pint
Butter, melted     3 TBSPN
Onion, granulated     1 TBSPN
Garlic, granulated     1 teas
Pureed blackeyed peas   2

      Method of Preparation      
 
Place all the dry ingredients into a mixing bowl.      
Whip eggs, buttermilk and melted butter.        
Slowly add the liquid to the dry ingredients mixing thoroughly.    
Add the pureed black eyed peas mix thoroughly to incorporate.    
Scoop a tablespoon of the batter into 350 degree oil fry 4 -5 minutes until golden brown.
Place onto paper lined tray and serve .
