Chef Keith West's Shrimp Burgers

1 slice wheat bread ( to make 1 ½ cup crumbs)

1 pound raw shrimp, cleaned, deveined and cut in ¼-inch dice

3 Tbl. mayo

2 Tbl. thin sliced green onion

2 Tbl. minced fresh parsley

2 tsp. grated lemon zest

1/8 tsp. salt

1/8 tsp. black pepper

Pinch cayenne

2 tsp. Old Bay seasoning

1 tsp. lemon juice

Combine all ingredients and mix well, so that ingredients stick together. Allow mixture to rest in the refrigerator at least 15 minutes, or longer. Shape into patties and grill. Serve with remoulade sauce. Yields 4 Burgers
