Friday's recipe (8/10/12) - Aimee Fortney's Cuban Sandwich

Nothing better than a yummy Cuban sandwich in South Florida! Making it on your own, though es tan fácil. ("is so easy" in Spanish).

I can't really take credit for this, but this is how my sweet Cuban friends taught me to make the Cuban sandwich. If you do not have a panini maker (press), do not worry! You can use a heavy pan on top of your sandwich and get the exact same results!

1 loaf Cuban bread

1 pound roasted pork (I get the Spanish pork from the Publix deli)

1 pound sweet ham

8 slices swiss cheese

mustard

dill pickles

Heat a non-stick skillet to medium high heat. Slice Cuban bread in half, then in half again. Spread mustard on both sides of the bread, then layer pork, ham, pickles and cheese. Add top bun and proceed as though you were making a grilled cheese. (Some people add butter to the bread, but I only used cooking spray). Place sandwich in skillet, then place a heavy skillet (preferably a cast-iron skillet) on top of sandwich, and press down with your hands. Cook for about 1 to 2 minutes, then flip and repeat process with heavy skillet. Slice sandwich in half on the diagonal and enjoy!
