Friday's recipes (7/13/12) - Amy Fortney's Key Lime Pie Pops

Theseare the perfect treat for cooling off on hot days.  A smooth, creamy treateveryone will love, and they are super simple to make!

1 cup Cabot vanilla bean Greek yogurt
1 can sweetened condensed milk (fat free can be used)
3/4 cup to 1 cup key lime juice (use 1 cup for full, tart flavor)
graham cracker crumbs for topping
lime zest for topping
2 cups chocolate chips (optional)
Dixie paper cups
popsicle sticks

Place 10 cups in muffin pans.  Put about 1/2 teaspoon graham cracker crumbs into bottom of cup.  Mix yogurt, condensed milk and key lime juice in a bowl.  Using an ice cream scoop, scoop mixture into cups.  (1 full ice cream scoop per pop).  Sprinkle about 1 teaspoon graham cracker crumbs onto each mixture.  Put into freezer for about 30 minutes, then insert sticks.  Return to freezer for three hours.  If dipping in chocolate; melt chocolate chips in microwave, stirring to melt all chips, and allow to cool.  Remove paper cup wrapper, then dip popsicle into chocolate, then return to freezer to set; about 15 minutes.  For plain pops, remove cup wrapper, then sprinkle additional crumbs on top and sprinkle lime zest on top for garnish.  Enjoy!
