
AIMEE FORTNEY'S WATERMELON PICO DE GALLO
This is another great one from my Great-Aunt Earlene. You can serve this as an appetizer or as a topping for pork, fish, turkey, chicken ... you name it. Jicama is a sweet, root vegetable. This is just delicious! Yum, yum, yummalicious!
1½ cups diced watermelon
½ cup diced jicama
½ cup chopped fresh cilantro
¼ cup diced honeydew melon
¼ cup diced cantaloupe
¼ cup diced red onion
2 Tablespoons freshly squeezed lime juice
1 jalapeño, seeded and finely chopped (keep seeds in for heat)
½ teaspoon salt
In a large bowl, gently toss all ingredients to combine. Try not to break up the pieces. Serve with tortilla chips or as a compliment with chicken or anything that you would like! I sauteed chicken breasts in 1 Tablespoon olive oil, a tiny bit of salt and pepper. Simple and light for a great summer meal!
