Chef Martha Watkins' Lemon Cilantro Pasta Salad
•2 quarts of cooked penne pasta
•1 quart of fresh spinach leaves
•1/2 red onion, julienned
•1 cup of julienned roasted red peppers
•1 cup of crumbled feta cheese
•1 cucumber, sliced into half moons
•1 bunch of cilantro
•1/2 bunch of green onions
•1 cup of lemon juice
•3/4 cup of white sugar
•1 1/2 cup of olive oil
• salt and white pepper to taste
Blend dressing ingredients together using a blender or food processor and toss over ingredients above.
Adjust dressing for sweetness and salt, should be sweet and sour tasting.
