Mexicali Burrito
Ingredients:
- Whole wheat tortilla 10-12''
- Rice
- Spinach
- Black Beans
- Salsa
- Avocado
- Tofu Scramble
Tofu Scramble Recipe:
- Crumble two blocks of firm tofu
- Add 2 tbsp turmeric
- 2 tbsp nutritional yeast
- 1 tbsp black pepper
- 1 tbsp salt
- Dice ½ red onion
- Add some other diced veggies (i.e. zucchini, carrot, cauliflower)
- Other herbs to taste (i.e. ancho chili powder, cayenne, cumin)
- Sautee
Combine all prepared ingredients in a tortilla and wrap.
