AIMEE FORTNEY'S JAMAICAN JERK CHICKEN SANDWICHES (WITH A SWEET, SOUTHERN TWIST)
If you can't go to the islands, just bring the island to your kitchen!
3 boneless skinless chicken breasts
3 Tablespoons Jerk Seasoning - the "hot" is very hot so be careful!
1 carrot, grated
1 sweet potato, baked
2 Tablespoons crushed pineapple
1 avocado, "smashed"
your favorite buns
Place chicken breasts in a small casserole dish. Spread Jerk seasoning on top of chicken and let breasts marinate for about 15 minutes. Bake at 350 for 30 minutes. Remove from oven and slice chicken. Meanwhile, scoop out sweet potato and mix with pineapple to make a sweet "spread" to go on the buns to "tone down" the heat of the sandwich. Top with grated carrots for a sweet crunch and spread the smashed avocado on the top bun. Enjoy, Mon!
