Standing Rib Roast
5 –7 lbs standing rib roast
5 tablespoons fresh crushed garlic
1/2 cup olive oil
5 tablespoons of fresh oregano
1 tablespoon black pepper
1 1/2 tablespoon of salt
Mix olive oil, garlic, oregano, pepper and salt.
Brush mixture over roast and let sit at room temperature for 1 hour before cooking.
Preheat oven to 450 degrees.
Place roast on rack in roasting pan with the fat side up.
Place in oven for 20 minutes.
Reduce heat to 325 degrees and continue to cook for remainder of time. (25-30 minutes per pound of roast)
Roasted Green Beans tossed in Sundried Tomato Pesto
Place 3 to 4 ounces of sundried tomatoes in small stock pot.
Cover in water and bring to boil.
Let cool and drain.
In food processor puree tomatoes in 1¼ cups olive oil until smooth.
Add 1 teaspoon of salt and 1 teaspoon of pepper.
Clean 1 lb. fresh green beans.
Toss in ½ cup of sundried tomato mix.
Place on baking sheet and cook at 350 degrees for 15 minutes.
