Roasted Cornish Hens and Baby Red Potatoes
Dry mix for sprinkling: (Makes more than needed - keep extra in airtight container for future use.)
1 Tablespoon sea salt
1 Tablespoon black pepper
½ teaspoon ground chili pepper
½ teaspoon ground paprika
¼ teaspoon ground oregano
¼ teaspoon ground thyme
½ teaspoon ground basil
1/4 teaspoon cinnamon
Thaw overnight in refrigerator.
Rinse thoroughly in cool water.
Pat outer skin dry.
(Truss at this point if desired)
Rub hens generously with extra virgin olive oil.
Sprinkle generously with dry mix.
Place hens breast up on a large Pyrex baking dish
Quarter 6 potatoes and toss in 4 tablespoons of olive oil.
Sprinkle with sea salt and pepper
Arrange potato wedges around hens .
Place in preheated 375 degree oven.
Bake for 45 minutes.
Serve from baking dish.
