
AIMEE FORTNEY'S GREEK PIZZA
Pizza dough from bakery
3 cloves of garlic, minced
1 small red onion, diced cooking spray
1 bag of fresh spinach
freshly ground black pepper
crushed red pepper flakes (optional)
1 cup ricotta cheese
2 cups Italian cheese or Mozzarella cheese
crumbled feta cheese
black olives, sliced
Roll your pizza dough out on a greased pizza pan. Saute onion, and garlic in cooking spray or just a splash of olive oil. Add spinach and black pepper and cook until spinach is wilted; about 2 to 3 minutes. It will look like you have a lot of spinach, but it will cook down to almost nothing! Set aside on a paper towel lined plate, then "blot" the mixture with more paper towels. (This is to ensure that your pizza is not soggy). Sprinkle garlic and spinach mixture across pizza. Add black olives and cheeses. For the ricotta, I like to "dollop" the ricotta mixture across the pizza, and it puffs up and is delicious when baked! Bake at 400 for 10 minutes, then slide pizza off of pizza pan and directly onto oven rack. Bake for another 10 minutes then enjoy!
