Friday's recipe (12/30/11) - Aimee Fortney's seafood nachos, chocolate pudding shots

AIMEE FORTNEY'S SEAFOOD NACHOS
For a simple but delicious twist on nachos, serve these seafood nachos at your next party!  

1 bag of tortilla chips
1 bag shredded Mexican cheese
1/2 block of Monterrey Jack Cheese, grated
1 jar of crab claw meat
1/4 pound of cooked shrimp, chopped
Fresh pico de gallo (or salsa)
sour cream
guacamole

On a cookie sheet lined with aluminum foil, spread tortilla chips out.  Sprinkle cheese all over the top, then add the crab meat and shrimp.  Bake at 375 for about 12 to 15 minutes; just until the cheese is melted.  Garnish with fresh pico de gallo or salsa; then sour cream and guacamole!  

AIMEE FORTNEY'S CHOCOLATE PUDDING SHOTS
These are a fun and easy treat for the adults to enjoy!

1 small package chocolate instant pudding mix
1 cup milk
1/2 cup Irish Cream Liquer (I like Carolans)
1/2 cup Vodka
1 carton frozen whipped topping that has thawed (in refrigerator)
Homemade whipped cream (for topping)
miniature chocolate chips (also for topping)
disposable shot glasses

In a large bowl, whisk together pudding, milk, Irish Cream and Vodka for about two to three minutes.  Now whisk in whipped topping.  Spoon into disposable shot glasses.  Place on a cookie sheet then freeze overnight.  Garnish with homemade whipped cream and miniature chocolate chips.  Serve with wooden spoons or regular spoons; let thaw just enough to enjoy!
