Friday's recipe (11/25/11): Aimee Fortney’s raspberry goat cheese spread, raspberry fizz

AIMEE FORTNEY'S RASPBERRY GOAT CHEESE SPREAD

1 long roll of goat cheese (or two small)
1/2 cup seedless raspberry jam, heated
raspberries for garnish
crackers of your choice

Place goat cheese on a platter in the center, and place raspberries around it for garnish.    In the microwave, heat seedless raspberry jam until it is runny; about 20 to 30 seconds.  Drizzle jam across middle of goat cheese and around the platter.  Serve with your favorite crackers.

AIMEE FORTNEY'S RASPBERRY FIZZ
Champagne
Raspberry Sherbet
2 ounces Raspberry Rum or Raspberry Vodka (I add both)
Sugar Rimmed Martini Glasses
Raspberry for Garnish

In a blender, fill it half-way full of champagne.  Add two or three scoops of sherbet, then the shots of rum/vodka.  Blend covered.  (You do not want the blender more than half full of champagne, or you will have a big mess!)  Cover a saucer with sugar and another with water.  Dip the martini glass in the water to coat the rim, then roll the rim in the sugar to sugar-coat the glass.  Garnish with a plain or sugared raspberry.
