
AIMEE FORTNEY'S CORN CHOWDER
My Mom told me that my Grandmother Jackson made this for us when I was a little girl, and my Mom just had to have the recipe! This is an easy and very delicious Corn Chowder! Perfect for cool nights, and the chunks of potatoes make it so hearty and yummy!
5 slices bacon
1 medium onion, thinly sliced and separated
2 medium potatoes, diced
½ cup water
1 can creamed corn
2 cups milk
1 teaspoon salt
dash of pepper, butter
Cook bacon until crisp, set aside and crumble. Reserve 3 Tablespoons bacon drippings. Add onions to sauce pot with bacon drippings and cook until lightly browned. Add diced potato and water, cook until tender, then add corn, milk, salt and pepper. Cook until heated through. Top each bowl with crumbled bacon and pat of butter.
AIMEE FORTNEY'S CHOCOLATE CARAMEL CANDY CAKE
This is another sweet recipe from my Mom, Linda Jackson. It tastes like a famous candy bar ... and my heavens, it is so good!
1 German Chocolate Cake Mix
1 package of caramels
½ cup evaporated milk
6 ounces chocolate chips
½ cup chopped pecans
Mix everything the same as package, but omit oil and use 1 stick of butter, and 1 Tablespoon vanilla. Mix together and pour half of the batter into 9 x 13 pan. Bake at 350 for 10 minutes. Melt a package of caramels and ½ cup evaporated milk together. Spread on top of cake. Spread 6 ounces chocolate chips and ½ cup chopped pecans on top of caramel. Spread other half of cake batter on top and bake for 20 to 25 minutes.
