PIEROGY AND APPLE BRUNCH CASSEROLE
1 16-ounce package frozen Mrs. T's Pierogies
1 tablespoon vegetable oil
1 large sweet onion, halved and sliced
1 tablespoon butter
2 red apples, cored and sliced
½ teaspoon ground cinnamon, divided
½ cup sour cream
Saute pierogies and package directs.
In 12-inch skillet over medium heat, in hot oil, cook onion slices until lightly browned and just tender, stirring occasionally. Remove to bowl.
In same skillet over medium heat, melt butter. Add apple slices and ¼ teaspoon cinnamon; cook until lightly browned, stirring occasionally.
In small bowl combine sour cream with remaining ¼ teaspoon ground cinnamon.
On large platter combine pierogies with onions and apple mixture; toss to mix well. Top with sour cream. Serves 4.
