Monday’s recipe (8/8/11) - Aimee Fortney's Vegetable Turnovers

1 package of sliced mushrooms
1 bag of fresh spinach
1 red onion, sliced
1 red bell pepper, sliced
1 clove garlic, minced
salt and pepper to taste
shredded cheese of your choice
2 sheets of puff pastry, thawed
1 egg, beaten with 1 teaspoon water

On a floured surface, roll out one sheet of puff pastry.  Cut into four even squares.  Repeat with other puff pastry.  

In a saute pan, spray with cooking spray, then cook onion, bell pepper and mushrooms. Season with salt and pepper then add garlic, saute for another minute, then add the spinach. Cook until spinach is wilted.  Remove from heat and blot any moisture with paper towels.  Place mixture in the center of each puff pastry square.  Add cheese to the top, then fold into triangles or rectangles, sealing the edges with your fingers or with a fork.  Make an egg wash with beaten egg and water, and then brush on top of pastry.  Bake in preheated 350 oven for 30 to 35 minutes or until golden brown.  Enjoy!


AIMEE FORTNEY'S CHOCOLATE PASTRIES

Pastry and chocolate ... my weakness.  You can add any kind of chocolate that you have on hand; chocolate chips, chocolate chunks, white chocolate, broken pieces of a whole candy bar or even miniature candy bars.

2 sheets of puff pastry, thawed
1 egg, beaten with 1 teaspoon water
Chocolate chips assortment * I used semi-sweet, milk chocolate and white chocolate

On a floured surface, roll out one sheet of puff pastry.  Cut into four even squares.  Repeat with other puff pastry.  Place various chocolate pieces in the center of each puff pastry square (amount to your desire; I used about a handful of chocolate for each pastry).  Fold into triangles or rectangles, sealing the edges with your fingers or with a fork.  Make an egg wash with beaten egg and water, and then brush on top of pastry.  Bake in preheated 350 oven for 30 to 35 minutes or until golden brown.  You can serve this with a chocolate ganache drizzled across the top to "step it up" for dessert, or they are simply delicious as is!
