Monday's recipe (8/1/11) - Aimee Fortney's Ceviche & Banana Smoothie

Ceviche is a delicious, simple treat to enjoy and Savor!  You need to use the freshest fish not only for flavor, but to ensure the citrus juices will marinate and "cook" the fish.

1 pound fresh, good quality white fish**, like red snapper or sea bass (with no bones)  I use tilapia for an inexpensive option.

1 cup fresh squeezed lime juice
¾ cup fresh squeezed lemon juice
½ cup fresh squeezed orange juice
1 clove of garlic, minced
1 small red onion, finely minced
1 jalapeño, finely diced (or for more heat, you could use a Serrano or habanero pepper, also finely diced)
salt and pepper to taste (I like to use kosher salt)
½ cup cilantro, chopped (added shortly before serving so cilantro does not become wilted)
Red, green and yellow bell peppers, finely diced for added color. 
Extra lime slices for garnish
Avocado slices for garnish

Cut the fish into bite size pieces and place in a large glass bowl with the lime, lemon and orange juices.  Add the garlic, red onion and pepper, tossing all to coat.  Cover with clear wrap, and refrigerate for 4 hours, stirring occasionally.  (You may refrigerate overnight, although you might find the fish tastes more like citrus juice than fish.  Your choice!)  You will know the ceviche is ready when the color changes from a pinkish, fleshy color to a white color.  Remove from the refrigerator, uncover and add salt, pepper and cilantro, stirring gently to mix.  You may serve this on a tostada, with chips, or in a beautiful martini glass with a lime wedge and avocado slices for garnish.  Enjoy!

**You may make this with shrimp or scallops.  



2 bananas, frozen
1 cup fat free vanilla yogurt
1 cup vanilla soy milk

The "secret" to my smoothies always being thick and creamy is I freeze my bananas or whatever kind of fruit I am using, and do not use ice.  This way, the flavor is intensified and the consistency is not watered down, due to ice.  I do not use any ice.  When bananas start to turn, just put them in the freezer.  When you are ready to use, pop in the microwave for about 30 seconds to remove the peel.  This is so delicious, it tastes like homemade ice cream!  Frozen peaches are delicious; they make your smoothie taste like homemade peach ice cream!  Toss in some blueberries or anything else that you enjoy!  You can use any flavor of yogurt to mix it up!  Enjoy.
