Friday's recipe (7/15/11) - Aimee Fortney's turkey meatloaf with zesty topping

Michala's favorite meal is meatloaf, mashed potatoes and green peas. If we had this and our homemade pizzas every night, my child would be tickled to death!

1 pound ground turkey
1 white onion, grated (I use a grater to make the onion juice come out, and to change the
texture)
1 carrot, grated
4 to 6 slices of bread, grated (I use the grater to make bread crumbs) or torn into very small pieces
Sazón Completa (to your taste)
salt and pepper (to your taste)
1 egg, beaten
⅓ cup milk (I do not measure this, so forgive me!)
¼ cup ketchup
2 Tablespoons brown sugar
2 Tablespoons mustard

In a large bowl, add bread crumbs, seasonings and pour milk on top. Let the bread crumbs absorb the milk. Next, add the egg, carrot, onion and stir to combine. Lastly, add your ground turkey (or beef) and mix all together. (I like to add the meat last, or you could overwork your meat and make it tough.) Grease a loaf pan, and pour into pan. Now mix ketchup, brown sugar and mustard, then spread over top. Bake at 375 for 50 minutes to 1 hour.

This is especially cute for kids' parties!

Cantaloupe
Pineapple
Strawberries
Grapes
Wooden Skewers

Cut cantaloupe in half and using a melon baller, or cutting into cubes, cut (or scoop) balls of melon. Set aside for kebabs. Remove the top part of a pineapple, and set aside. Cut your pineapple into chunk size pieces, and set aside for kebabs. Using wooden skewers, randomly place pieces of melon, pineapple, strawberries and grapes. When it is time to assemble the "fruit head" just flip a cantaloupe half over, cut side down. Place pineapple top on top of round side of cantaloupe, then place two skewers on each side of pineapple head into cantaloupe to secure. Serve fruit kebabs with fruit dip!

 

AIMEE FORTNEY'S SOUTHERN FRUIT DIP

We Southerners will find something we really like, then have several different ways to prepare it! This is just another way to prepare fruit dip. I, personally, love this one and I like to use it when there are children and adults together for a gathering. Everyone really seems to enjoy this!

1 (8 ounce) package cream cheese, softened
½ cup powdered sugar
1 cup frozen whipped topping
zest of one orange, and fresh orange juice

Mix the cream cheese and powdered sugar together. Fold in the frozen whipped topping and orange zest and juice. Feel free to play around with your taste buds, and substitute lemon, lime or even pineapple for the lemon juice.
