Thursday's Recipe (7/7/11) - Bethlehem Cookie Bar by Grace Hawkins

Ingredients: Bottom Layer Brownie: 1/2 cup cocoa, 1½ cup flour, 2/3 cup vegetable oil, 1 teaspoon baking powder, 2 cups sugar, 1 teaspoon salt, 4 eggs.

Top Layer Cookie: 1 cup butter, softened, 3/4 packed brown sugar, ¼ cup white sugar, 1 (3.5 ounce) package instant vanilla pudding mix, 2 eggs, 1 tsp vanilla, 2¼ cups all-purpose flour, 1 teaspoon baking soda, 2 cups semisweet chocolate chips

Directions: Mix together bottom layer ingredients and pour into a greased 13x9 size pan. For top layer, in a mixing bowl, cream butter and sugars. Add pudding mix, eggs, and vanilla. Combine flour and baking soda; add to creamed mixture and mix well. Fold in chocolate chips. Drop small spoonfuls of cookie batter into cake pan on top of the bottom mixture. Be sure to cover completely and as evenly as possible. Bake at 365 F for 30 to 35 minutes or until top layer is lightly browned.
