Monday's recipe (6/20/11) - Tropical Island Turkey Burgers

TROPICAL ISLAND TURKEY BURGERS WITH PIÑA COLADA SAUCE/CHOCOLATE PIZZA

1 to 1 ½ pounds ground turkey

1 pound ground pork or an egg** (see note)

1 can sliced pineapple in its juice/syrup

½ small white onion, finely diced

2 Tablespoons Jerk Seasoning

¼ teaspoon salt

¼ teaspoon black pepper

1 ½ Tablespoons + 1 Tablespoon Teriyaki sauce

2 Tablespoons Extra Virgin Olive Oil

1 cup vanilla yogurt (plain may be substituted)

1 teaspoon Cream of Coconut

Dash of Rum* optional

Hamburger buns

 

Preheat grill pan over high heat.

 

**Ground turkey crumbles easily, so it needs some fat. You can either mix in ground pork or a well beaten egg to the mixture to prevent the burger from crumbling and getting too dry.

 

In a small bowl, combine pineapple slices and 1 Tablespoon Teriyaki sauce. Take 2 slices of pineapple and chop. Take 1 slice of pineapple and 1 teaspoon juice and place in serving bowl for sauce. (Recipe follows). In a large bowl, combine ground turkey, ground pork, chopped pineapple, onion, Jerk seasoning, salt, pepper and Teriyaki sauce. Gently combine all of the ingredients and pat out to make burgers (about 6 to 8 regular sized burgers; or you can make into "party-fun" sized sliders! Drizzle extra virgin olive oil over each burger, and place on hot grill pan. Cook for 2 minutes on each side, then reduce heat to medium low and cook burgers 7 to 8 minutes longer, turning occasionally; no more than twice. Do not press down on burgers, you want the juices to remain inside. Transfer to a plate and let burgers rest for 2 minutes before serving. Spread Piña Colada sauce on buns. Place burgers on buns, and serve with garnishments of your choice.

 

AIMEE FORTNEY'S PIÑA COLADA SAUCE:

In a small serving bowl, combine yogurt, 1 pineapple slice finely chopped, pineapple juice, cream of coconut and dash of rum. Stir to combine.

 

AIMEE FORTNEY'S CHOCOLATE HAZELNUT PIZZA

 

1 deli pizza dough or homemade, cooked

nutella (chocolate hazelnut spread)

semi sweet chocolate chips

milk chocolate chips

white chocolate chips

chopped walnuts or pecans (optional)

 

Cook Pizza dough at 400 for 20 minutes. Remove from oven and spread Nutella on top. Sprinkle the various chocolate chips on top and nuts, if desired. Pop back in the oven for another 2 to 3 minutes to melt the chocolate. Take a knife and swirl melted chocolate on top of pizza.
