Wednesday's Recipe (6/15/11) - Three Bean Salad

1 can 365 Everyday Value® brand garbanzo beans
 
1 can 365 Everyday Value® brand red kidney beans
 
1 can 365 Everyday Value® brand black beans
 
½ stalk celery, diced in small pieces
 
2 large carrots, diced in small pieces
 
½ red onion, diced in small pieces
 
¼ cup fresh chopped Italian parsley
 
2 tablespoons freshly chopped tarragon
 
¼ cup canola oil
 
¼ cup red wine vinegar
 
3 tablespoons white sugar
 
1 tablespoons lemon juice
 
Lemon zest from 1 lemon skin
 
Salt and black pepper to taste
 
 
 
Method: 
Add all ingredients in large mixing bowl. Mix and allow to marinate for one hour in refrigerator.  Mix again right before serving.  Serve chilled.
