Monday's Recipe (6/13/11) - Aimee Fortney's Easy Baked Tilapia & Veggies With White Wine

This is a great recipe for a quick, healthy dinner! A breeze to throw together, and cleanup is even easier!


4 tilapia fillets
1 bag of frozen vegetables of your choice (butter beans, corn, peas; whatever you love)
olive oil
white wine
salt, pepper, cayenne; your favorite seasonings


Grab a bag of your favorite frozen vegetable. Tear 4 pieces of aluminum foil (large enough for a piece of fish and to seal). Place about 1/2 cup of veggies on the bottom (I love butter beans, but corn works, peas; whatever you like) place a piece of tilapia on top, drizzle olive oil, salt, pepper, cayenne for a kick, and a dash of white wine on top. (You can use leftover wine or even champagne for this - you just want that kick of flavor; you don't need much!) Fold aluminum foil over to seal, place packets on baking sheet and bake at 400 for about 15 minutes! You can use red pepper flakes, oregano or any seasonings that you love!


A quick and easy way to use summer's greatest gift to us ... fresh fruit! You can use any of your favorite fruits; even peaches and cream! Just mix fresh berries with a little bit of sugar and allow flavors to "marry" in the refrigerator. Serve with homemade whipped cream in martini or wine glasses for a pretty presentation! Easy and delicious!


Fresh strawberries, raspberries, blueberries and blackberries
2 Tablespoons sugar


For whipping cream, you can use frozen whipped topping, or the spray kind, but why bother when you can easily make your own?


1 cup of heavy cream (or whipping cream)
3/4 cup sugar


(Taste and you will know how sweet you want your cream to taste). With an electric mixer, and a bowl that has been chilled in the freezer (I also stick my beaters in the freezer when I make fresh whipped cream) mix until peaks appear. If you keep beating it, you will have butter on your hands!
