Kick Up Your Heels Key Lime ChickenIngredients:1 stick butter (I use light butter)
4 skinned chicken breasts
1 teaspoon salt
1 teaspoon pepper, freshly ground
1/4 teaspoon paprika
1 medium onion, thinly sliced or chopped
4 garlic cloves, minced (I use pre-minced in a jar)
1/4 cup Key lime juice
Directions:Melt butter over medium heat in large skillet with cover. Add chicken and cook until lightly browned. Sprinkle with salt, pepper, and paprika. Add onion and garlic. Cook, stirring occasionally, for about 5 minutes. Pour lime juice over chicken. Cover and simmer 25 to 30 minutes or until fork can be inserted with ease. Remove cover and cook a few minutes until chicken is a golden color.4 Servings
