Friday's Recipe (5/29/09)

Salmon Florentina Southern Style

1 T Butter, 1 T Olive Oil
6 oz Salmon Filet, sliced scaloppine, lightly flour
1 Pinch of Oregano, Basil, White Pepper, Nutmeg
1 tsp Garlic
1 tsp Lemon Zest
1 C Spinach, chopped
1 T Sun-dried tomatoes
3 oz Country ham, chopped
1 T Bacon, crumbled
2 oz Brandy
1 C Heavy whipping cream
2 T Parmesan cheese
3 oz Fettuccine

Melt butter, warm oil add salmon while adding spices, garlic and lemon zest saute couple a minutes add spinach, tomatoes, ham and bacon add brandy, burn off the alcohol. Add whipping cream when it starts to bubble around the edges add paremsan saute for a few minutes, serve over fettuccine.
