Mini Kentucky Hot Brown

8 slices Sourdough Baguette, seared or grilled with butter 8oz deli sliced Turkey, julienned 8oz deli sliced Ham, julienned 1lb Shredded Cheddar 8 slices Roma Tomatoes 8 slices cooked Bacon 1pt Supreme Sauce

Supreme Sauce
1oz Butter
1oz A.P. Flour
18oz Chicken Stock, warm
1cp Sour Cream

In a sauce pot, melt the butter. Add flour to warm melted butter forming a roux. Then stir until fully incorporated while cooking for about 1 minute. Wisk into the roux the chicken stock & bring to a simmer. Let simmer for about 5 minutes and remove from heat. Strain gravy, if needed, to remove any uncooked roux. Finally whisk in sour cream.

First pre heat the oven to broil. On a sheet pan, start to assemble your sandwiches. Start with a base of our bread slices, then layer with turkey and ham. The next layers are of bacon, tomato, and then cheddar. Finally top with supreme sauce. At this point, place the sheet pan of mini hot brown sandwiches into the oven. Broil until slightly golden & bubbly, or about 5 minutes. Remove from oven & plate for service.
