Shrimp Pasta Scampi
Ingredients:
1 cup white wine (Chardonnay)
1/4 cup fresh pureed garlic
1/4 cup extra virgin olive oil (EVOO)
1 stick salted butter
2 Tablespoons lemon juice
1 Lemon cut into 4 wedges
1 teaspoon sea salt
12 jumbo peeled & deveined shrimp
3 cups prepared fettuccine
1/4 cup fresh grated Romano cheese
fresh cracked pepper
Directions:
-Preheat sauté pan on high heat.
-Add white wine, salt, lemon juice and garlic to pan & cook until wine reduces out.
-Add olive oil and shrimp. (sear shrimp until it starts to curl up).
-Remove from heat and add butter & pepper to taste.
-Toss with Fettuccine pasta and plate.
-Top with Romano cheese, fresh chopped parsley and garnish with lemon slices.
Yields 2 servings
