Chicken Breast Stuffed with Spinach, Smoked Cheddar and ApplesYield: 4 servings4 Boneless, skinless chicken breasts
1/2 apple, sliced
1 cup of fresh spinach, chopped
2 oz smoked cheddar cheese, sliced
1 cup all purpose flour
2 eggs
1/4 cup water
2 cups fresh breadcrumbs
salt and pepper
Place chicken between 2 pieces of plastic wrap and pound to slightly less than ¼ in, being careful not to make holes in the meat. Remove plastic wrap and season with salt and pepper. Place 2 slices of apple, chopped spinach and a slice of cheese inside. Roll the chicken up, keeping the roll tight. Freeze for about 1 hour until well chilled. Meanwhile, make pans for breading. One pan should be flour only, one pan egg and water and one pan the breadcrumbs. Dredge the stuffed breast in flour, shaking off excess, then in the egg wash and finally in the breadcrumbs. Place the stuffed chicken on a clean plate and from here it can be deep fried and finished in the oven until cooked through (325 for 15 min).
For a healthier approach, after the breast is stuffed and rolled, it can be baked directly in the oven until cooked through.
